Carrot cupcake recipes from <i>Cupcakes!</i> by Elinor Klivans. Added concentrated orange juice and apple sauce in lieu of orange zest. Left out nuts and raisins. Added a cream cheese filling. Topped with my cream cheese frosting, toasted walnuts, and marzipan carrots.
